Lemon Meringue Pie

With Anna’s birthday coming up I decided to have my first try at one of her favorites. In the final steps I found that whipping egg whites into a meringue is an arduous task without any sort of electric beater. But with some endured exertion the meringue actually turned out great. Unfortunately, the lemon filling was another story. I’m guessing I didn’t cook the mixture long enough because even after cooling fully, the filling remains liquid. Last time Anna made this pie, her filling was great but the meringue topping was a literal flop. Looks like we’ll have to combine our efforts next time. Despite their downfalls, both pies tasted great.
